Healthy Baking, Happy nibbling with Nibblee Bits cookie mix

I was provided with a sample of Nibblee Bits cookie mix to try and I couldn't wait to nibble on them happily.
The cookies are so easy to make and require very few ingredients
1. Preheat oven to 350° F and place parchment paper onto cookie sheet
2. Empty the mix into a bowl then add 1/3 cup of melted butter or coconut oil and mix till well combined
3. Crack 2 eggs if using eggs or if using flax eggs you'll need 2 TBSP of ground flax seed and 6 TBSP of water
4. Scoop 12 cookies onto cookie sheet and shape gently
5. Bake for about 10-12 minutes
6. Let cool for 3 minutes and devour happily!
Chocolate chip cookies are my all time favorite they were and always will be a classic in my household ever since I was a child I enjoyed helping mom in the kitchen cracking eggs, pouring oil and mixing the batter while stealing a scoop or two of dough it was buttery, sweet, gooey and oh so delicious!
I loved watching the dough through the oven door as the cookies rose to their soft yet crunchy texture!
I couldn't wait for the moment to bite into them from their soft warm gooey texture to the luscious chocolate chips that were so rich that melted into not only your hands but mouth as well!
It was the perfect way to end the day biting into a piece of my childhood but with a twist from the surprising crunch of cacao nibs that provided a phenomenal flavor and texture!
The way the cookies puffed up reminded me of a macaroon it was so soft like a muffin but tasted like a cookie!
I really enjoyed these cookies the tiger nut flour provided a bit of sweetness, the nibs a great crunch and the way the chocolate chips melted in your mouth!
