It all began with Founder and professional pastry chef Michelle Retik of Squirrel & The Bee in Short Hills, NJ when she started trying her hand baking with nut flours and local raw honey the year of 2012 after she experienced great success with medical treatment for her ulcerative
Colitis.
She swapped unhealthy foods for nutritious ones such as eliminating all grains, most dairy and refined sugars which she saw relief in her symptoms and because of that success she is now symptom free !
Not long after that word got around about her delectable baked goods which Michelle realized a desire for her pastries for people who were on and off diets.
Squirrel & The Bee products are made with
•Nuts which is not only provides our bodies with healthy fats but is heart healthy, provides us with calcium as well as other nutrients that is great for the body. They use a blend of almonds, walnuts, pecans, hazelnuts, cashews and macadamia nuts for not only nutrition but taste as well.
•Raw Local Honey is used as a sweetener which keeps food miles
Down and also keeps the beekeeper to cover the costs of beekeeping .
Local Honey follows all the food standard needs but isn't mistreated to have a long shelf life and tastes different to foreign supermarket honey and has a unique local flora flavor.

Why is Squirrel & The Bee Grain free ?
Well because it is good for everyone not just those who are suffering from health problems like celiac or wheat intolerance but because the gluten free items on the market are laden with processed sugar, preservatives as well as other grains that aren't healthy for our bodies. Sugar and grains can cause inflammation within the body especially the digestive tract which may lead to numerous conditions such as Celiac, Crohns, Colitis, IBS/IBD, rheumatoid arthritis as well as ADD/ADHD and many other autoimmune diseases . Chronic headaches and even skin issues can be a sign of inflammation which is caused by both gluten and grains. So eliminating all grains like rice, potatoes, soy, wheat can help reduce the inflammation throughout your body.
So why add nuts to your diet?
When you incorporate nuts to your diet it adds heart healthy unsaturated fats plant-based proteins as well as fiber and the fiber and proteins slows down digestion which makes you feel fuller for longer periods of time and can also aid in weight loss. I received a few Squirrel & The Bee products to try out over the holidays and being that I have a major sweet tooth I couldn't wait to try them out especially their chocolate chip cookies !

I loved oatmeal cookies as a kid they were soft and chewy with it's juicy plump raisins. What's unique about Squirrel & The Bee's N'Oatmeal raisin cookie is the fact that it contains no oats and is made with their cinnamon-vanilla granola that is crunchy on the inside and soft out and taste just like the real thing !

I absolutely loved the brownie it was bittersweet, moist, decadent and oh so rich like fudge !
Each Squirrel & The Bee product I was sent was insanely delicious with it's decadent fudge like consistency in the brownie , the crispy salty sweet taste of the chocolate chip cookies and the way the N'Oatmeal raisin cookie reminded me of oatmeal cookies as a kid with it's soft and chewy cookie to it's juicy raisins and crunchy cinnamon sweet granola baked right in!
