Butter Cuisine Compound Finishing Butters!


It all began with husband Brian Halloran and wife Lori Halloran , Brian a French trained American Chef whose career blossomed all facets of the culinary arts. He was memorized at the 3 Star Michelin, Moulin Mougins, in France under the watchful eye of famous Chef Roger Verge. Brian has been the tiller of Boston's infamous Locke Ober CafĂ©, and Newport Rhode Island's Clarke Cooke House and a host of numerous upscale dining restaurants on both the Cape and Nantucket Massachusetts.
Brian furthered his career in teaching operations classes at Cornell University's School of Hotel Administration for a decade. Chef Brian's career led to manufacturing, R&D for well known global brands in seafood, fully cooked proteins and dairy products. Brian's projects line retail shelves and FS account menus across the United States and Canada. Brian lives with his wife Lori and five children and five grandchildren in Jamestown, Rhode Island.


Lori Halloran is a native Newporter that takes care of all the sales and marketing for Butter Cuisine LLC. where she has many years under her belt of experience in handling sales negotiations, she is passionate about networking and marketing for Butter Cuisine.

Just recently I had the pleasure of meeting with Lori and her husband Brian at Coastal Growers Farmers Market located on Casey Farm in Saunderstown, Rhode Island and not only learned about their compound finishing butters and what it means but also had a taste testing as well. What I learned is that a finishing butter is a classic culinary ingredient tool and technique to add a boost of flavor to any dish.

Their line of butters are made with both local, organic, and natural ingredients that helps maintain a farm to table "slow food" approach.

My mom sampled some of the butters as well and loved them especially the old fashion cinnamon !

Their butters can be used on anything imaginable to add flavor from chicken, beef, pork, fish , eggs and even popcorn!

I sampled both the Chili Lime and Thai Coconut butter flavors and was sold! What I loved was not only were they creamy their spices were not in any way overpowering, I thought they were so good in fact that I bought both of them to take home even though Kevin and Lori themselves provided me with samples of them to take home!

Chili Lime Coconut Butter: First you are greeted by the sweet creamy nuttiness of the coconut butter then fresh lime and zesty fire roasted chilies dance ever so happily on the taste buds! What I loved was it wasn't over powering with the heat from the chilies the coconut butter and juice of the lime really balanced it out quite perfectly making it the perfect addition to some zucchini !

 You can add the Chili Lime Coconut Butter to sandwiches as a spread, on tortillas, avocado smash , rice, pork, chicken, shellfish and even corn on the cobb!





Thai Style Coconut Butter:

Thai Style Coconut Butter offers an exotic flavor profile that's bursting with turmeric, ginger, lemon grass, Thai Basil and coconut that is great for adding flavor to basmati rice, shellfish and so much more!

I loved each Coconut Butter that I tried they were sweet yet spicy, cool and refreshing and were unique unlike anything I've tried before ! It was a pleasure meeting with Brian and Lori and speaking with them about their wonderful butters and they gave ideas to use them on as well which was so nice of them!

I will definitely be back for more!
