Barrett's Garden Vegan Cheeses !



It all began with Liz Barrett Founder of Barrett's Garden Foods which is a dairy-free alternative cheese company that is made in a dedicated dairy-free, gluten-free vegan kitchen on Hope and Main located in Warren, Rhode Island. 

Barrett's Garden cheeses made in small batches by hand with  non-GMO ingredients and always fresh. 

I had the pleasure of not only meeting Liz Barrett Saturday at the Coastal Grower's Farmers Market located on Casey Farm in Saunderstown , Rhode Island but tried out her delicious cashew based Farmesan Cheese which was amazing and here is the shocker I kid you not that it tastes just like Parmesan Cheese you know the kind that you sprinkle on pasta dishes? Yeah that kind it crumbles like it and tastes like it too! 

As soon as I tried the Farmesan cheese I was hooked so I bought myself a container.

Liz also makes a soy based Fauxcotta that resembles ricotta cheese made with oregano and basil. 
The Fauxcotta can be used in many Italian dishes such as pizza, sandwiches, stuffed shells, on crackers with jam or jelly making a savory yet sweet combo even on brushetta. 
 


Liz gave my mom and I some recipes pointers with the Farmesan when we got to talking about food and health which got me even more excited to start cooking with the cheese. I immediately thought of some of my all time favorite dishes that I've been missing out on the possibilities are endless with the Farmesan cheese from pasta, popcorn, baked potatoes, on veggies such as string beans, on chili, chicken Parmesan  for those meat eaters, veal, even eggplant !

Farmesan is made with non-GMO cashews, nutritional yeast, garlic powder and salt ! The flavor was spot on tasting just like the real thing even the texture it was crumbly, flavorful, and made my dishes anything but boring!


Here are some of the recipes I came up with a vegan chili made with crushes tomatoes, onions, carrots, black beans, sweet potatoes, red and white beans tossed in a pan with chili powder letting it simmer then sprinkled on the Farmesan cheese with a side of Siete Foods tortilla chips for an added crunch. The sprinkle of cheese made the chili flavorful and delicious being the perfect lunch or dinner to warm up to on a chilly day!

I also made eggplant Parmesan with whole wheat pasta and sprinkled the cheese on top and my was it good!  The cheese added great flavor to the salt less pasta sauce on top of the eggplant and pasta.

I loved the Farmesan Cheese and creating my old favorites since I went dairy free and can't wait to come up with more recipes!
