VitaFiber IMO Prebiotic Fiber Sweetener !




Who doesn't love the warm aroma of cinnamon wafting through the house on a crisp day, especially when they are cinnamon buns!? 

As a little girl each Christmas morning my mom would be in the kitchen baking up a batch of cinnamon buns with the sweet buttery icing on top you know which ones I'm talking about yup the one that woo hoo on the commercial when you poked his belly with the chef hat? Pillsbury dough boy baby that's who! 

The icing on top was literally my favorite part it was sweet, creamy and made Christmas morning extra special.

What I loved was the warm cinnamon sweetness paired with the gooey icing that made the buns chewy with a crispy flaky texture on the outside making them the perfect breakfast and or dessert now paired with coffee of course rather than an ice cold glass of milk.

When the air gets crisp I find myself craving sweets so in the kitchen it is to bake all things sweet especially my all time favorite breakfast food..yup you guessed it CINNAMON BUNS! Who can resist? 

I used Real Breads Cinnamon Roll mix and set the oven to 400 degrees with snow in the forecast these buns were a must.

So I whipped up the ingredients following the vegan recipe on the back of the package.

I added 3 tablespoons of flax seed to a bowl filled with 1 1/2 cups of water plus 3 tablespoons of water then added in 3 tablespoons of apple cider vinegar and the cinnamon roll packaged mix.

I whisked everything in the bowl slowly till well combined then vigorously as the batter thickened then I allowed it to rest for a few minutes after I let it settle I then kneaded it for another minute till the dough tightened up a bit. 

Then added the dough to parchment paper and got the rolling pin out and rolled out the dough into a rectangle shape about 8" x 13" being about 1/2" thick.




I melted a half cup of coconut oil into a small bowl and then dipped my pastry brush into the oil and spread it onto the dough evenly then I added a 1/3 cup of vita fiber IMO Prebiotic powder sweetener and 1/3 cup of cinnamon powder into a bowl and mixed it up making sure there were no lumps then I sprinkled the mixture onto the sticky dough.

I then gently pulled the parchment paper toward me and rolled the cinnamon roll dough into a log then sliced 10-13 sections and placing them onto a well oiled 9"x12" baking dish and popped them into the oven for 25 minutes.

What makes a good cinnamon bun is the cinnamon to frosting ratio am I right? 

I whipped up a sweet cream cheese icing, OK slightly sweet icing to spread on top of the cinnamon rolls.

For the icing I used 

one container of Kite-Hill non dairy cream cheese 
2 Tablespoons of Vitafiber powder
1 teaspoon of Vitafiber Syrup
1 Tablespoon honey
a dusting of the Vitafiber powder and cinnamon powder

Then whisked it all together with my hand dandy immersion blender till creamy and when the buns came out I spread the icing over the top sprinkling them with pecans and a touch more of the cinnamon mixture.

Biting into one of the buns as it came out of the oven reminded me of being a little girl all over again with the warm scent of cinnamon wafting through out the house making me feel all warm and cozy on such a crisp day.
