Cooking with Jeb Foods Plantain & Cassava Flour !

It all began living in the mid-western part of Nigeria, which is a country in West Africa where there was a wide selection of fresh fruits and vegetables that are grown naturally as well as tropical foods.

Meal time at home was prepped with numerous ingredients such as spices and seasonings that was from their garden or local market , not realizing that they could be genetically modified.

When Joy moved to the United States of America and homesick of the foods that she was brought up on were either canned or expensive which then sparked a drive to have the community have admission to foods that are naturally grown, high in quality and affordable.

She wanted to establish the seasoned meals she was brought up on across cultures and that is how Jeb Foods was born with the love and appetite to offer healthy as well as affordable foods with ingredients that are naturally grown which are made with simple ingredients.

Being a professional with over a decade of hands in experience in the drug development industry mostly in cancer treatment medicines, She has learned that numerous illnesses they develop maybe linked to genetics, lifestyle and the foods we eat can play a great role in our quality of the life we live which can be taken care of by our diets .

I strongly believe in that food is medicine which I've always had a love hate relationship with food even as I was a little girl I was overweight which continued to adulthood .

One day I woke up and realized I wanted to be in the best shape that I could be and started working out and ate healthy resulting in a 162 pound weight loss that I am proud of !

What I am saying is our bodies go through so much whether it's the lifestyle we live and we should treat our bodies as a temple nourishing them with nutritious foods from the inside and out.

Not long after I lost weight I discovered I was hypothyroid and began experimenting with foods with the Paleo diet which has broadened my appetite for new foods especially when baking which lead me to Jeb foods !

I love baking anything from breads, cookies, muffins but have never tried my hand at baking with cassava or plantain flour which Jeb foods provided me with to review !

Plantain Flour:

I used Jeb Foods plantain pancake recipe and turned them into cranberry blueberry muffins which I loved berry much by the way, see what I did there? I liked the way the batter for the muffins were thick and fluffy like a pancake making them unique in their own way ! I added in blueberries and cranberries being the perfect balance of both tart and sweet!



Cassava Flour:

Ever since I started the Paleo diet I haven't had me a single piece of anything fried such as chicken oh the tender succulent taste with that crispy golden brown crust on the outside makes my mouth water just thinking about it!


I heated the skillet with two tablespoons of Buffalo Style Ghee from Trader Joe's  that I had on hand and let it get nice and hot.

I then dredged the chicken strips in the cassava flour with a sprinkle of salt and pepper to taste then I carefully dropped the strips into the heated skillet till golden brown on each side then devoured them! 

These fried chicken strips were delightful in every way the Ghee gave them a nice golden color providing great taste and that crispy coating is what did me in! 


Living in New England sure is tough especially during the Summer what with all the seafood especially when on the Paleo diet so I created my very own version of fish n chips with Jeb Foods Cassava Flour and my god it was amazing! First you bite into the crispy coating on the outside and then you are greeted by flaky tender juicy fish! 

To make the fish I coated the skillet with avocado oil, sprinkled the cassava flour over with salt and pepper to taste and popped some carrot n' parsnip chips into the oven ! 


When it comes to meal planning I love to cook from soft and fluffy breads, to muffins, pancakes, and so much more especially when it involves experimenting with new to me products such as plantain and cassava flour like the ones that I received from Jeb Foods! The cassava flour added the crispy coating on fish n' chips that we all know and love it's flaky on the out and juicy on the in and how could I forget about the beautiful plantain muffins!? They were the perfect way to start the morning!
