Chunky Monkey Sunbutter Blondies recipe!





It all began in the Red River Valley located between the North Dakota and Minnesota line where it's known as the wealthiest as well as the most active agricultural region. 

In the heart of Fargo North Dakota smack dab in the middle of confection sunflower the  founder over at Red river commodities flourished a love for working with sunflower seeds due to a rise in peanut and tree nut allergies. 

Did you know that in the USA alone the sum if u.s. children with peanut allergies tripled from 1997 to 2008? 

With that being said they pondered if their sunflower seeds could be used as 
an alternative for kids as well as their parents.

They dreamed of a alternative to peanut butter made of sunflower seeds and began doing just that.

They started working with the U.S. department of agriculture to concoct their creamy smooth sunflower spread. 

Then they finally had it and sunbutter was born! 

What is sun butter?

Sun butter is a creamy smooth peanut free spread made from sunflower seeds.

I've heard of sun butter but have never tried it until now and I am so glad I did because it was creamy, it was sweet and oh so delicious and tasted just like 
peanut butter only without the nuts!

Being that Sunbutter is free from allergens your children can enjoy it 
wherever they go such as traveling, even at school or on the go for a quick snack! 

This snack that I've for right here is the perfect snack for nibbling on the go or as an after school treat!

Growing up as a kid I went nuts for banana bread I loved the way the bananas added a bit of sweetness and  moist sort of like cake!


I received a sample of sunbutter through Targets website not long ago and couldn't for the life of me think of what to make that is until I came across a wonderful chunky monkey banana bread recipe from http://www.beyondthebite4life.com and I was sold. It offered all things that make up the perfect banana bread! 

I gathered all of the ingredients and got to work.

What I liked about this recipe was that you measure, blend and pour simple as that!

Recipe:
2 bananas 3/4 cup pureed when measured
2 tsp vanilla 
1/2tsp pink him salt 
1/2 tsp baking soda
1/4 cup non-hydrogenated palm shortening (didn't have on hand) I used two
packets of sunbutter 
1/2 cup tiger nut flour
1/2 chocolate chips, cacao or carob chips


Topping
1 banana thinly sliced for topping 
1 tablespoon Coconut sugar to form a caramel color on the bananas 

Heat the oven to 350 degrees

I chopped the bananas and put them into the blender, added the vanilla and sunbutter and then pulsed until creamy.

Then toss in the tiger nut flour, baking soda and your salt and purée until you get a creamy batter.
Then fold in your chips of choice and spoon the batter into your 8X8 brownie pan lined with parchment paper and with a spatula smooth it out.

Then layer on the sliced bananas drizzle on a little coconut sugar and pop into the oven to bake for 45 minutes




When you take it out of the oven you'll notice a golden like crust let it sit for 20 minutes to cool off before you remove the blondies from the pan allowing them to chill out for a bit in the paper.

Then enjoy!

Who wouldn't love this as a snack? It's got ooey gooey creamy sunbutter , decadent chocolate morsels of goodness and bananas it's like a monkeys dream! 

I loved the creamy smooth texture and the roasted sunflower seed taste! It tasted just like peanut butter but it wasn't! 

It was creamy, it was smooth, it was rich, it was nutty, it was sweet and oh so delicious!



Sunbutter is now exclusively sold at Target and online as well so look for it today!
